With this work we have in view to evaluate the hygienic conditions of raw milk, stored in milk cans at production sources. We extracted 63 milk samples immediately after the morning milking (by machine or by hand) in cattle farms, located in the great region of Goiânia city, State of Goiás, that we assorted at random from 33 farms in 16 municipalities. It was determined the milk dirtiness rate with results in mg/l and correlated with micro-organism enumerations as quality indicators.
